I feel like the goal posts shifted, but yes, full disk encryption is possible when selecting "Something else"/manual partitioning.
It is an advanced topic, and quite involved, so unless you already know what you're doing, or enjoy spending time figuring things out the hard way, I'd recommend an easier route: Install #LinuxMint with no encryption, then use #VeraCrypt to set up full disk encryption.
As for me, I'll give the new #Fedora 41 a spin, it sounds polished!
