Mmm I didn’t get as much done today as I wanted because dentist and freezer drama so I didn’t manage to complete the amendments to my review paper. I’ve pencilled in a two hour slot for it tomorrow afternoon. I have to say I find my manager’s criticism very constructive, I feel like I’m learning a lot from her (she’s published over 100 papers and books!).

More freezer shenanigans now then I can make the dinner. It’s our favourite cod, potato and spring onion stew this evening 😊 #food

Errands this morning and then coming home to chill on the couch and watch practice and quali for car go fast (f1).

Hoping to get a bit of baking done as well, pretzels and maybe a pie? I wanted to do strawberry rhubarb but the store keeps being out of it. Hoping I can find the spoons to stop at a produce market where I may have better luck.

Partner has reminded me to take it slow and not overdo it... which is... yeah. I need to do that.

It’s still not as good as the perfect idli I had in Bengaluru. I doubt I’ll ever get it that good. But I can slowly make this very good, just like I slwoly learned to make other precise foods. #cooking #food #idli

The thing I think I cracked this time is cooking time and amount to put in the mold. In the instant pot, I need to warm the water on the sautee setting, then put in the stands, then set to pressure cook for 1 minute and separately set a timer for 10 minutes. After the 10 minutes are up, at which point the 1 minute steam will be done, manual release the steam. Then wait a moment to take them out of the molds. #cooking #food #idli

My best homemade idli so far this morning! The batter was fermented yesterday and was in the fridge. I think it keeps fermenring in the fridge, just slowly so if anything the batter was fluffier.

I didn't get some of the things done that I wanted to do in the kitchen today. It was too jolly cold. But I did get stuff done anyway, which was good - some of the kitchen stuff and some other stuffs.

Kitchen things included:

✅ Cooking heaps of chickpeas for the freezer, using the soaking liquid from the shiitake mushrooms, kombu and other bibs and bobs - it made enough for using in 5 or 6 meals. I love that I can take a bag from the freezer, tip in onto a baking tray with vegetables, and roast.

✅ Had this amazing broth as a result of cooking the chickpeas that way.

✅ Used half of the broth when making congee, and the congee was GOOD. There are enough leftovers for 2 serves I reckon.

✅ Used the rest of the broth to make a soupy curry or maybe a curried soup, with some overly spicy tomato mixture I had in the fridge, some of the chickpeas, and half a large block of extra firm tofu (cubed). There is enough soup/curry for the weekend + half the week I reckon 😄 The spiciness has been tamed but it is still beautifully "warming", and the tofu is awesome. Added a small slug of my vinegar to balance out those hot hot flavours.

✅ First time cooking tofu in the #InstantPot and it is a game changer.

✅ Read all my books on making miso and making koji (as it is very expensive), preparing to make the miso kit sometime in the next few days.

❌🙅‍♀️Did not go shopping for the things I need to make the miso - mainly salt to use as a weight on top of the miso. I just need the cheapest salt I can find, as I only have celtic sea salt at home.

✅ A large bowl of sweet miso soup.
✅ Millet is soaking.
✅ Jars are out ready for the next ferments
❌🙅‍♀️Did not get ferments made.
❌🙅‍♀️I need to use up some things in the fridge to make space for new ferments. I have some end-of-ferment jars that can be used up.

I feel happy with that. Most importantly I kept warm due to working a lot from my bed-office with layered doonas.
